Holiday Sausage Balls
- 1 pound uncooked sausage
- 4 cups ready-to-cook biscuit mix
- 1/2 pound grated cheddar cheese
- 2 tablespoons dried parsley
Work all the ingredients together and roll into balls. Place on lightly greased cookie sheet and bake at 350 for 20 minutes. Freeze or defrost as needed.
Halloween Holiday Treat
SALMON FUDGE
- 14 ox can of undrained salmon
- 1 1/2 cups oat flour
- 1 tablespoon garlic powder or granulated garlic
- 2 eggs lightly beaten
- 1/2 cup parmesian cheese
Mix all ingredients in blender or food processor. Spread on oiled or nonstick cookie sheet at desired thickness. Bake at 350 degrees for 20 minutes. Cool and slice with pizza cutter for desired thickness.
For cats, you can leave out the garlic in this recipe
Get Those Vegetables in Omlette
- 2 tablespoons olive oil
- 1 cup broccoli, finely chopped
- ½ cup kale, finely chopped
- 1 clove garlic, diced or crushed
- 1 tablespoon parsley
- 4 eggs beaten
Warm the oil and lightly sauté garlic. Add the veggies and cook until slightly soft. Pour the beaten eggs in over the vegetables and cook over low heat until done.
Cool and serve. *Vegetables may be substituted.
Morton's Favorite Meal
- 1/2 cup of beef left raw and diced into small pieces
- 1/4 cup of alfalfa sprouts chopped fine
- 1 Tablespoon of Nutritional Yeast
- 2 Tablespoons of creamed corn
Mix the first three ingredients together.
Place on plate.
Put a dollop of the creamed corn on the side.

Ellie's Lunch Muffins
- 1 cup wholemeal flour
- 1 cup bran flakes
- 1 cup rolled oats
- 2 tsp baking powder
- ½ tsp baking soda
- 1 cup milk
- 1 cup unsweetened acidophilus yoghurt
- 2 grated apples
- 1 grated carrot
- 2 eggs
Method
Beat eggs, add milk & yoghurt, mix until smooth. Mix in apple and carrot, then dry ingredients, mix, spoon into muffin tins. Bake in a moderate oven for 30 minutes (this time may vary with different ovens - check after 25 minutes to assess).
Makes 18 muffins.
Yummy!! I quite often add a mashed banana but if you do you need to add a little more flour. Also a pinch of cinnamon is nice too - Ellie loves that!
Rosie's Vegetable Quiche

- 1 cup chopped cooked broccoli
- 1 cup frozen corn kernels, thawed and drained
- ¼ cup chopped green pepper
- 2 tablespoons chopped chives
- 1 cup cottage cheese
- ½ cup plain yogurt
- 1 whole egg
- 1 egg white
- ½ cup grated Mozzarella cheese
- ¼ cup whole wheat pastry flour
- 1 tablespoon extra virgin olive oil
- ½ teaspoon baking powder
Preheat oven to 350 degrees. Coat (9-inch) glass pie plate with vegetable cooking spray. Add broccoli, corn, pepper and chives to pie plate. Toss gently to mix. Combine cottage cheese, yogurt, egg, egg white, cheese, flour, olive oil and baking powder into a blender. Blend until smooth. Pour egg mixture over vegetables in the pie plate. Mix and smooth top with spatula. Bake at 350 degrees for 30-40 minutes.
Rocky's Fabulous Casserole

- 1 acorn squash, peeled and cubed
- 3 carrots, finely chopped
- 3 McIntosh apples, cored and cubed
- 1 sweet potato, peeled and cubed
- 1 can vegetable broth
- 1 ½ cups of milk or soy milk
- 3 tablespoons whole wheat flour
- 1 teaspoon dried parsley
- ½ teaspoon dried basil
- 3 tablespoons melted butter
Combine squash, carrots, apples, and sweet potato into casserole dish. Pour melted butter over the top and mix well.
Stir flour into milk and mix well. Combine broth, milk mixture, parsley and basil and pour over mixture.
Bake at 375 degrees for 1 hour.
Salmon and Asparagus for Cats
One 16 oz can of Salmon or 16 oz. of cooked Salmon- One 16 oz can of Asparagus or 1 lb of cooked asparagus.
- 4 tablespoons of heavy cream.
- Place salmon in bowl and use a fork to mash it up just a bit.
- Cut asparagus into 1/2'" pieces and mix in with salmon.
- Add any juice from can or a little bit of the water from cooking the asparagus into the mix.
- Mix in heavy cream.
- Serve
- Refrigerate remaining portions.
