Ellie's Lunch MuffinsBeat eggs, add milk & yoghurt, mix until smooth. Mix in apple and carrot, then dry ingredients, mix, spoon into muffin tins. Bake in a moderate oven for 30 minutes (this time may vary with different ovens - check after 25 minutes to assess).
Makes 18 muffins.
Yummy!! I quite often add a mashed banana but if you do you need to add a little more flour. Also a pinch of cinnamon is nice too - Ellie loves that!

Preheat oven to 350 degrees. Coat (9-inch) glass pie plate with vegetable cooking spray. Add broccoli, corn, pepper and chives to pie plate. Toss gently to mix. Combine cottage cheese, yogurt, egg, egg white, cheese, flour, olive oil and baking powder into a blender. Blend until smooth. Pour egg mixture over vegetables in the pie plate. Mix and smooth top with spatula. Bake at 350 degrees for 30-40 minutes.

Combine squash, carrots, apples, and sweet potato into casserole dish. Pour melted butter over the top and mix well.
Stir flour into milk and mix well. Combine broth, milk mixture, parsley and basil and pour over mixture.
Bake at 375 degrees for 1 hour.
One 16 oz can of Salmon or 16 oz. of cooked Salmon
